If you want to jailbreak your Apple TV 2G on iOS 5.0, 5.1, then you need to jailbreak it with the latest Seas0nPass.Fortunately, FireCore Dev-Team has just released an updated for Seas0nPass 0.8.3 which will allow you to jailbreak your Apple TV 2 on latest iOS 5.0, at the same time, they also released an updated version of aTV Flash (black) to be compatible with the new UI (user interface) present in the 5.0 firmware.
Note: This jailbreak is still tethered which means that you will have to connect your Apple TV 2G to PC or Mac and boot it in jailbroken state every time it reboots.

How To Jailbreak Apple TV 2G On iOS 5.0 And iOS 5.1 With Seas0nPass 0.8.3
Download atest version of iTunes; Seas0nPass: Mac [10.6 or later] | Windows [XP or later] ;
Note: A micro USB cable will be required to complete the jailbreak process. Please disconnect all iPods, iPhones, and iPads from the computer before running Seas0nPass.
Step 1: Unzip the ‘Seas0nPass.zip’ file which you downloaded from the link above and launch Seas0nPass.

Step 2: Click on ‘Create IPSW’ button to start iOS 5.0 (iOS 5.1) tethered jailbreak process.

Step 3: In this step Seas0nPass will download latest iOS 5.0 (iOS 5.1) firmware and create a custom ‘jailbroken’ IPSW.

Step 4: Once the process is completed Seas0nPass will ask you to connect your Apple TV to your computer, connect your AppleTV to your Mac/PC using a micro-USB cable (leave power cable disconnected at this point).
Once the light on the front of the AppleTV begins to flash rapidly, point the remote at the AppleTV and hold both the MENU and PLAY/PAUSE buttons for 7 seven seconds.
Important: This step will require the silver (aluminum) AppleTV remote that was included with the ATV2. The older, white (plastic) remotes will not work.

Step 5: iTunes will open automatically and start the restore process.

Step 6: iTunes will confirm the restore when complete – Your AppleTV 2G is now jailbroken!
How to Boot in Tethered Mode:
Step 1: Open Seas0nPass and select the ‘Boot Tethered’ option.
Step 2: When prompted, connect the AppleTV to your computer via USB. Wait for the rapid flashing light then connect the power. Once both are connected hold both the ‘MENU’ and ‘PLAY/PAUSE’ buttons for 7 seven seconds.
Step 3: Seas0nPass will complete the tethered boot automatically. Once complete, remove the USB cable and connect the HDMI cable.
Note: The Apple TV MUST be disconnected from the computer (for at least a brief moment) after restoring in iTunes for the tethered boot process below to work properly.
The steps of jailbreak Apple TV 2G on windows is similar to the above method on Mac, you can just follow the prompts to do the correct operation.
